Unsaturated Fatty Acids
Unsaturated fatty acids are fatty acids containing hydrocarbon chains with at least one double carbon-carbon bond, which results in fewer hydrogen atoms. Each double bond causes a rigid bend or kink in the carbon skeleton, and lipids containing these fatty acids are liquid at room temperature.
